Arroz Caldo 4 servings Ingredients: * 1/2 cup dried shiitake mushrooms * 2 cups hot water * oil of choice; I highly recommend bacon fat * bay leaf * onion * garlic * ginger; powdered is fine * red pepper flakes * 1 cup sweet glutinous rice * green onion (for garnish) Steps: 1. Make a quick broth by pouring hot water over shiitake mushrooms in a heat safe bowl and covering for >=1 hour. 2. When the broth looks dark, heat your oil and add the bay leaf. Remove the leaf once it's crispy and replace with aromatics. 3. Add in mushrooms you fished out of the broth and fry them until you do not fear shiitake mushroom dermatitis. 4. Add glutinous rice, the mushroom broth, and 2 more cups of water. Bring to a boil, then lower to a simmer and cover. Stir occasionally and add water as needed for about 30 minutes. Serve hot with green onion garnish.s You can fry up another protein of some kind as it finishes, like an egg or Spam or longanisa. If you used bacon fat, the bacon is divine on top.
